A plate of scones can make Christmas breakfast feel special without a full brunch menu. This recipe uses Leavenworth tea in the dough and glaze, bringing the blendâs fruit, almond, citrus, and spice character into a familiar bake.
Inspired by Leavenworthâs mountain-village holiday atmosphere, these scones suit a festive morning or a quiet winter visit. Our teas are hand-mixed in small batches on Washingtonâs Long Beach Peninsula, with a kiss of Pacific Ocean air.
Leavenworth Christmas Morning Scones
Yield: 8 scones.
Allow 16â20 minutes for baking, plus preparation, brewing the glaze tea, and slight cooling before glazing.
Scone ingredients
2 cups flour; 1/3 cup sugar; 1 tbsp baking powder; 1/2 tsp salt; 1 tbsp very finely ground Leavenworth tea; 1/2 cup cold butter; 2/3 cup heavy cream; 1 egg; 1 tsp vanilla.
Glaze ingredients
1 cup powdered sugar and 2 tbsp strongly brewed Leavenworth tea.
Instructions
- Whisk dry ingredients and cut in cold butter until crumbly.
- Whisk cream, egg, and vanilla separately; add to flour mixture and gently combine.
- Shape into a round and cut into eight wedges.
- Bake at 400°F for 16â20 minutes.
- Cool slightly and drizzle with tea glaze.
Prepare the two tea components
The dough uses very finely ground Leavenworth tea. Remove hard whole spices or woody botanicals and grind only suitable ingredients very finely. Do not leave coarse, hard pieces in the dough.
The glaze uses strongly brewed tea rather than dry leaves. Brew and strain before measuring the 2 tablespoons into the powdered sugar.
What Leavenworth brings
Leavenworth pairs apple and cranberry with almond, orange zest, and cinnamon over a black tea and rooibos base. It contains caffeine and almonds.
Tea ingredients: Organic Black Tea, Organic Rooibos, Organic Hibiscus, Organic Safflower, Organic Rose Hips, Organic Apples, Almonds, Organic Cranberries, Organic Orange Peel, Organic Cinnamon, Organic Blackberry Leaves, Pure Extracts.
Finely ground tea in the dough is not interchangeable with brewed liquid without changing the recipe.
Keep the butter cold
Cut cold butter into the dry ingredients until crumbly, then gently mix with the wet ingredients. Keep that sequence rather than creaming softened butter as you might for cookies.
Plan a simple breakfast
Read through the method before beginning, including the tea preparation for the glaze. Set out the ingredients and leave time for the scones to cool slightly after baking.
Serve with drinks your guests enjoy and any familiar breakfast additions you have planned. A plate of scones can be enough for a small winter visit as well as a holiday morning.
