Starter: Winter Citrus & Herb Salad with Mindfulness Tea Vinaigrette

Ingredients (Serves 4–6)

For the vinaigrette:
- 1 Tbsp Beach House Teas' Beach Wellness: Mindfulness
- ½ cup boiling water
- 1 tsp honey or infused sugar (Lemon Peel Sugar works beautifully)
- 1 Tbsp Dijon mustard
- ¼ cup olive oil
- 2 Tbsp white balsamic or champagne vinegar
- Salt & pepper to taste
For the salad:
- 6 cups mixed greens
- 2 mandarin oranges, peeled and segmented
- ½ small red onion, thinly sliced
- ¼ cup pomegranate arils
- ¼ cup toasted almonds or pecans
Instructions
- Steep Mindfulness Tea in boiling water for 10 minutes. Strain and cool.
- Whisk tea concentrate with mustard, honey, vinegar, salt, and pepper.
- Slowly whisk in olive oil to emulsify.
- Toss salad ingredients and drizzle with vinaigrette before serving.
Main Course: Cranberry Crush Tea–Glazed Holiday Ham

Ingredients
- 1 fully cooked spiral ham (8–10 lbs)
- 2 cups strong-brewed Beach House Teas' Cranberry Crush
- 1 cup cranberry sauce
- ½ cup brown sugar or PNW Cane Sugar
- 2 Tbsp butter
- 1 Tbsp Dijon mustard
- 1 tsp orange zest
- Pinch of cloves or cinnamon (optional)
Instructions
- Preheat oven to 325°F.
- In a saucepan, combine tea, cranberry sauce, sugar, butter, mustard, and zest. Simmer 10 minutes until thick.
- Brush half the glaze over ham, cover with foil, and bake 1 hour.
- Uncover and brush with the remaining glaze. Bake another 20–30 minutes until glossy and caramelized.
- Rest 10 minutes before slicing.
Side Dish: Rosemary & Black Tea Roasted Potatoes

Instructions
- Preheat oven to 425°F.
- Toss potatoes with oil, salt, pepper, garlic, and rosemary.
- Spread onto a baking sheet, then pour the tea evenly over them.
- Roast 35–40 minutes, turning once, until crisp on the edges and tender inside.
Dessert: Spiced Chai Apple Crumble with Apple Orchard Cider Tea

For the crumble topping:
- 1 cup rolled oats
- ½ cup flour
- ½ cup brown sugar
- ½ cup melted butter
- 1 tsp cinnamon
Instructions
- Preheat oven to 350°F.
