Beach House Teas Signature Recipe: Peninsula Harvest Holiday Stuffing

Rustic bread stuffing with apple, celery, and herbs in a ceramic baking dish beside a mug near a misty coastal window.

Holiday stuffing is often where the familiar flavors of a meal come together: bread, onion, celery, apple, and herbs. In this recipe, brewed Peninsula Harvest tea becomes part of the liquid that moistens the bread before baking.

We hand-mix our teas in small batches on Washington’s Long Beach Peninsula, with a kiss of Pacific Ocean air. This savory side brings a Peninsula-inspired blend to the holiday table.

Peninsula Harvest Holiday Stuffing

Yield: Serves 8–10.

Allow 8 minutes for the tea infusion and 45–50 minutes for baking, plus preparation and sautéing time.

Ingredients

12 cups cubed rustic bread; 2 tbsp Peninsula Harvest tea; 3 cups hot water; 6 tbsp butter; 1 large onion, diced; 3 celery stalks, diced; 1 apple, diced; 2 tsp fresh sage; 1 tsp thyme; 1/2 tsp rosemary; 1 tsp salt; 1/2 tsp pepper; 2 eggs.

Instructions

  1. Steep tea for 8 minutes and strain.
  2. Sauté onion, celery, and apple in butter until tender.
  3. Combine bread, vegetables, herbs, salt, and pepper.
  4. Whisk eggs with 2 cups brewed tea and gradually toss into bread until evenly moistened.
  5. Bake covered at 350°F for 30 minutes; uncover and bake another 15–20 minutes.

Measure the tea after brewing

Begin with 3 cups hot water for the infusion, then measure 2 cups brewed tea to whisk with the eggs. Keep those quantities distinct rather than pouring all of the infusion into the bread.

Strain before measuring so loose tea ingredients do not remain in the stuffing. Use brewed tea, not dry tea leaves mixed into the bread.

Bake as a separate side dish

Bake the stuffing in a separate dish, covered first and then uncovered. This method is not intended for cooking stuffing inside a turkey.

Check ingredients before serving

Peninsula Harvest contains bee pollen. Check the current full tea information and the labels for bread, butter, and other ingredients against your guests’ needs.

This stuffing also includes eggs. Do not describe it as vegan, dairy-free, or gluten-free. Keep ingredient information available so guests can make their own choices.

Make room on the holiday table

A side serving 8–10 can accompany the main dish your household enjoys. There is no need to build a whole menu around it; choose other dishes you can prepare comfortably.
