Recipe: Fog Horn Grey Tea Jelly


Nothing better than a Sunday morning brunch with some Muesli Morning Round Pita Bread with our homemade Fog Horn Grey Tea Jelly. 

Makes about 3

1 3/4 cups water
6 heaping teaspoons of Fog Horn Grey artisan loose leaf tea
3 cups granulated sugar
2 Tbsp lemon zest
1/4 fresh lemon juice
1 Tbsp grated fresh ginger
1 3-ounce package liquid pectin


In a medium saucepan, bring 1 3/4 cups water and loose leaf tea to a boil over high heat; remove from heat. Cover and let steep for 30 minutes; remove tea leaves by straining. 

Add sugar, lemon zest and juice, and ginger; bring to a boil over medium heat. Cook until sugar is dissolved for 2 minutes; remove from heat, and stir in pectin. Return to a boil, cook, stirring constantly, until slightly thickened, 1 to 2 minutes. Let cool completely. Cover and refrigerate util set, about 4 hours.
